About this Dish

A slow-baked casserole of white beans, sausage, and duck confit.

History & Origin

Cassoulet hails from the Languedoc region of southwest France, named for the cassole clay dish it's traditionally baked in, simmered for hours until deeply rich.

🦆Duck confit legs, 2 (store-bought is fine)
🌭Toulouse sausages, 4 thick links
🥓Smoked lardons or thick-cut bacon, 150g
🧅Large onion, 1 roughly chopped
🧄Garlic cloves, 4 smashed
🍅Canned whole tomatoes, 400g tin
🌿Bouquet garni (bay leaves, thyme, parsley stalks tied together)
🍷Dry white wine, 200ml
🍞Breadcrumbs, 4 tablespoons for the crust

The night before, soak the dried beans in a large bowl of cold water overnight. The next day, drain them, cover with fresh water in a pot, and simmer for 45 minutes until just tender but not mushy. Drain and set aside, keeping a cup of the cooking liquid.

Preheat your oven to 160°C (320°F). In a large heavy oven-safe casserole dish or Dutch oven, fry the lardons over medium heat until golden. Add the onion and garlic and cook for 5 minutes until soft.

Pour in the white wine and let it bubble for 2 minutes, scraping up any bits from the bottom. Add the canned tomatoes, bouquet garni, cooked beans, and enough reserved bean liquid to just cover everything. Stir gently to combine.

Nestle the duck confit legs and Toulouse sausages into the bean mixture, pushing them down slightly so they are mostly submerged. The duck skin should sit facing upward.

Scatter the breadcrumbs evenly over the top to form a crust. Place the casserole uncovered into the oven and bake for 1.5 to 2 hours. Check every 30 minutes — if the crust looks too dry, gently press it down into the liquid with the back of a spoon so it soaks up the juices and reforms.

The cassoulet is ready when the top is deeply golden and crusty, the beans are creamy, and the sausages are cooked through. Remove the bouquet garni, let it rest for 10 minutes, and serve straight from the pot with crusty bread.
