The word "enchilada" simply means "chili-ed" in Spanish — the dish traces back to Mayan and Aztec traditions of wrapping tortillas around small fish, later adapted with Spanish-introduced ingredients.

🌽Corn tortillas, 12 small
🍗Chicken breasts, 500g cooked and shredded
🧀Monterey Jack or cheddar cheese, 300g grated
🧅White onion, 1 medium finely diced
🥫Canned crushed tomatoes, 400g
🌶️Dried ancho or guajillo chillies, 3 whole
🧄Garlic cloves, 3 minced
🫙Chicken stock, 250ml
🌿Ground cumin, 1 tsp
🧈Vegetable oil, 3 tbsp
Method

Make the chilli sauce by soaking the dried chillies in boiling water for 15 minutes until softened, then remove the stems and seeds. Blend the soaked chillies with the crushed tomatoes, garlic, cumin, and chicken stock until completely smooth, then season with salt to taste.2
Heat 1 tablespoon of oil in a saucepan over medium heat, pour in the blended sauce, and simmer for 10 minutes until it darkens slightly and thickens. Set aside to cool a little.3
Mix the shredded chicken with half the diced onion and a handful of the grated cheese in a bowl, seasoning well with salt and pepper. This is your filling.4
Heat the remaining oil in a small frying pan and briefly warm each tortilla for about 20 seconds per side to make them pliable and prevent cracking. Dip each warmed tortilla into the chilli sauce to lightly coat both sides.5
Spoon a generous line of the chicken filling down the centre of each tortilla, roll it up tightly, and place seam-side down in a greased baking dish. Repeat until all tortillas are filled and snugly packed in the dish.6
Pour the remaining chilli sauce generously over all the rolled tortillas, making sure they are well covered. Sprinkle the rest of the grated cheese evenly over the top.7
Bake in a preheated oven at 190°C (375°F) for 20 minutes until the cheese is melted, bubbly, and golden at the edges. Serve hot, topped with remaining fresh diced onion and sour cream if desired.User Reviews
