Finland's most unusual food — a dark, dense, intensely malted rye porridge eaten at Easter. Made from rye flour and malt, baked slowly until almost black in colour and powerfully bitter-sweet in flavour. Eaten cold with cream and sugar. Mämmi is an acquired taste that Finns feel a patriotic duty to love. It is perhaps the most distinctively Finnish food in existence.

🌾Dark rye flour, 300g
🟫Dark rye malt powder (ruismaltaat), 200g
💧Water, 1.5 litres, boiling
🧂Salt, 1 tsp
🍬Dark treacle or molasses, 3 tbsp
🌿Dried bitter orange peel (or regular orange zest), 1 tsp
🫙Extra rye flour for dusting the baking dish, 2 tbsp
🍦Double cream and sugar, to serve
Method

Bring the water to a rolling boil, then remove from heat and let it cool slightly to about 80°C. In a large heavy pot, whisk together the rye flour and rye malt powder until evenly mixed.2
Gradually pour the hot water into the flour and malt mixture, stirring constantly with a wooden spoon to avoid lumps. The batter will be quite thin at this stage — this is correct. Stir in the salt, treacle, and orange peel.3
Cover the pot with a lid and leave the mixture to rest and ferment at room temperature for 3–4 hours, stirring occasionally. The batter will thicken considerably and develop a deep, sweet-malty aroma. Do not rush this step — it builds the characteristic flavour.4
Preheat your oven to 150°C (fan 130°C). Grease a deep ovenproof dish or traditional oval birch-bark style mould, then dust the inside lightly with rye flour to prevent sticking. Pour in the thick mämmi batter, filling no more than two-thirds full.5
Bake uncovered in the low oven for 2.5 to 3 hours, until the surface forms a dark, firm crust and the mämmi has turned a very deep brown — almost black. It should smell intensely of malt and be firm to the touch at the edges.6
Remove from the oven and allow to cool completely at room temperature, then refrigerate for at least 24 hours before eating. This resting period is essential — the flavour deepens and the texture firms up into the traditional dense, scoopable consistency.7
Serve cold in bowls with a generous pour of cold double cream and a spoonful of sugar over the top. Mämmi is traditionally eaten at Easter and keeps in the fridge for up to a week.User Reviews
