About this Dish

A caramel custard flavored with rose liqueur, Dubrovnik's signature dessert.

History & Origin

Unique to Dubrovnik, rozata gets its distinctive floral note from rozalin, a homemade rose petal liqueur passed down through Dalmatian families.

🍬Granulated sugar, 200g (100g for custard, 100g for caramel)
🥛Full-fat milk, 500ml
🌹Rozalin (rose liqueur or rose water), 3 tablespoons
🫙Vanilla extract, 1 teaspoon
🍋Lemon zest, from half a lemon
🧂Salt, a small pinch
Method

Preheat your oven to 160°C (325°F). Make the caramel by melting 100g of sugar in a small saucepan over medium heat, swirling gently until it turns a deep amber colour. Quickly pour it into the bottom of a 1-litre round baking mould or individual ramekins, tilting to coat the base evenly, then let it set.

Warm the milk in a saucepan over low heat until just steaming — do not boil. Remove from heat and set aside to cool slightly for a few minutes.

In a large bowl, whisk together the 4 whole eggs, 2 egg yolks, and 100g of sugar until well combined and slightly pale. Do not over-whisk or you will create too many bubbles.

Slowly pour the warm milk into the egg mixture while stirring gently. Add the rose liqueur, vanilla extract, and lemon zest, then stir to combine. Strain the mixture through a fine sieve into a jug to ensure a silky smooth custard.

Pour the custard gently over the set caramel in the mould. Place the mould into a deep roasting tray and carefully pour hot water into the tray until it reaches halfway up the sides of the mould — this is your water bath (bain-marie).

Bake in the preheated oven for 50–60 minutes, until the custard is just set with a slight wobble in the centre. Remove from the water bath and allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

To serve, run a thin knife around the edge of the mould, place a serving plate on top, and flip confidently in one swift motion so the caramel flows down over the custard. Serve chilled.
