A humble staple across the island, this one-pot rice dish reflects Madagascar's reliance on rice as the base of nearly every meal.

🍚White rice, 400g rinsed
🥬Leafy greens (cassava leaves, spinach, or moringa), 300g roughly chopped
🥩Pork belly or beef, 300g cut into bite-sized pieces
🧅Onion, 1 large finely chopped
🧄Garlic, 3 cloves minced
🍅Tomatoes, 2 medium diced
🫒Vegetable oil, 2 tablespoons
🧂Salt, 1.5 teaspoons or to taste
💧Water, 1.2 litres
🛢️Neutral cooking oil, 2 tablespoons
Method

Heat the oil in a large heavy-bottomed pot over medium-high heat. Add the meat pieces and brown them on all sides for about 5 minutes until lightly golden.

Add the onion and garlic to the pot and stir together with the meat. Cook for 3 minutes until the onion softens, then add the tomatoes and cook for another 2 minutes until they break down slightly.

Pour in the water and bring everything to a boil. Add the salt, then stir in the rinsed rice, making sure everything is well combined.

Reduce the heat to low, cover the pot tightly, and cook for 15 minutes. Do not lift the lid during this time so the steam cooks the rice evenly.

After 15 minutes, open the lid and place the chopped greens on top of the rice without stirring. Replace the lid and cook for a further 8 to 10 minutes until the greens are wilted and the rice is fully cooked.

Gently fold the greens through the rice and meat, taste and adjust salt if needed. Serve hot straight from the pot — this dish is meant to be humble, hearty, and comforting.
