History & Origin

Bun cha is Hanoi's most beloved dish — grilled pork in a sweet-sour fish sauce broth with vermicelli noodles. It became internationally famous in 2016 when Barack Obama visited Hanoi and dined on bun cha with Anthony Bourdain at a plastic-stool restaurant, the image of the US president eating with chopsticks becoming one of the defining food photographs of the decade. The charcoal grilling is inseparable from the dish — the smoke and char of the pork belly and patties is the defining flavour note. The dipping broth must be freshly made and properly balanced between fish sauce salt, lime sourness, sugar sweetness and chilli heat.

🐷Pork belly, thinly sliced, 400g
🐷Pork mince, for patties, 300g
🍜Bun (vermicelli rice noodles), 400g
🫙Fish sauce, 4 tbsp
🍬Sugar, 3 tbsp
🍋Lime juice, 3 tbsp
🧄Garlic, minced, 4 cloves
🌶️Bird's eye chilli, sliced, 2
🥕Carrot and unripe papaya, shredded, for garnish
🌿Fresh mint, perilla, lettuce, to wrap
Method

Marinate the pork belly slices in fish sauce, sugar, garlic and shallots for 30 minutes. Mix the pork mince with the same marinade and form into small patties.

Make the dipping broth by combining fish sauce, sugar, lime juice, garlic and chilli with water. It should be sweet, sour and savoury.

Grill or barbecue the pork belly and patties over charcoal until caramelised and charred in spots. The char is essential for the smoky flavour.

Place the grilled meat into the dipping broth while still hot.

Cook the vermicelli noodles according to packet instructions. Drain and rinse under cold water.

Serve the broth with meat in a bowl, with the cold noodles, fresh herbs and pickled vegetables on the side. Dip the noodles and herbs into the broth as you eat.
What Makes it Authentic

The pork must be grilled over charcoal — the smoke is essential. The dipping broth should be sweet, sour and savoury in perfect balance. Serve everything separately for the diner to assemble.
