The world's most ordered Indian dish — tender tandoor-charred chicken in a velvety tomato, butter and cream sauce.

History & Origin

Butter chicken (murgh makhani) was invented in 1947 at Moti Mahal restaurant in Delhi by Kundan Lal Gujral. The story goes that leftover tandoori chicken was simmered in a sauce of tomatoes, butter and cream to prevent it drying out — an act of kitchen thrift that created the world's most ordered Indian dish. Jawaharlal Nehru and Richard Nixon both dined at Moti Mahal. The dish is now the most ordered dish on Deliveroo and Uber Eats in the UK, Australia and Canada. The Kashmiri chilli that gives it the distinctive orange-red colour without excessive heat cannot be substituted without changing the dish's character entirely.

🍗Chicken thighs, boneless, 800g
🍅Tomatoes, blended, 800g
🧈Unsalted butter, 80g
🥛Double cream, 150ml
🧅Brown onion, finely diced, 2
🧄Garlic cloves, minced, 6
🫚Fresh ginger, grated, 2 tbsp
🌶️Kashmiri chilli powder, 2 tsp
🌿Garam masala, 2 tsp
🌿Fenugreek leaves (kasuri methi), 1 tbsp
Method

Marinate the chicken in yoghurt, garlic, ginger, Kashmiri chilli and garam masala for a minimum of 4 hours. Overnight is better.

Cook the marinated chicken under a very hot grill or in a tandoor until charred in spots. The char is not burnt — it is essential flavour.

Fry the onions in butter over medium heat for 20 minutes until deep golden. Add the garlic and ginger paste and fry for 5 minutes.

Add the blended tomatoes and all the spices. Cook down for 20-25 minutes, stirring regularly, until the oil separates from the masala.

Blend the sauce completely smooth and pass through a fine sieve for a silky texture. Return to the pan.

Add the grilled chicken, butter and cream. Simmer for 10 minutes. Finish with kasuri methi — crush it between your palms before adding to release the flavour. Serve with naan or basmati rice.
What Makes it Authentic

The chicken must be cooked in a tandoor or under a very hot grill first to get the char. Blend the sauce completely smooth and pass through a sieve. Use Kashmiri chilli for the colour.
