History & Origin

Cha ca — turmeric and dill fish — is Hanoi's most famous dish and one of the most distinctive in Vietnamese cuisine. The dish is so associated with one street in Hanoi's Old Quarter that the street was renamed Cha Ca Street. The restaurant that created it, Cha Ca La Vong, has been serving the same dish from the same location since 1871. The combination of turmeric, dill and fish is unique in Southeast Asian cooking — dill is not a typical Vietnamese herb — suggesting French colonial influence. The dish is cooked tableside over charcoal in a clay pot, the fish sizzling in butter with an enormous quantity of fresh dill added at the last moment.

🐟Catfish or snakehead fish, boneless, 600g
🌶️Turmeric powder, 2 tsp
🫚Fresh galangal, grated, 2 tbsp
🫙Shrimp paste, 1 tsp
🌿Fresh dill, large bunch
🧅Spring onions, cut into 5cm pieces
🧈Unsalted butter, 50g
🍜Bun (vermicelli noodles), to serve
🌰Roasted peanuts, to serve
🫙Mam tom (fermented shrimp sauce), to serve
Method

Cut the fish into large chunks. Marinate in turmeric, galangal, shrimp paste and a little oil for at least 2 hours.

Cook the vermicelli noodles according to instructions. Prepare all garnishes — roasted peanuts, fried shallots, fresh dill and spring onions.

Heat a clay pot or pan with butter over medium-high heat at the table or in the kitchen.

Add the marinated fish and cook for 3-4 minutes, turning carefully.

Add the dill and spring onions right at the last moment — they should wilt just from the heat of the pan.

Serve the sizzling fish at the table. Each person assembles their own bowl with noodles, fish, fresh herbs and peanuts, with a dipping sauce of mam tom (shrimp sauce) on the side.
What Makes it Authentic

Use catfish or snakehead fish. The turmeric and dill combination is unique to this dish. Cook tableside in a clay pot over charcoal. The dill must be added at the very last moment.
