History & Origin

Com tam — broken rice — is the definitive street food of Ho Chi Minh City, a dish born from poverty that became a beloved institution. Broken rice consists of grains that broke during harvesting and milling — it was cheaper than whole grain rice and became the food of the urban poor. Saigon's street vendors discovered that broken rice had a unique texture — slightly stickier and more absorbent — that complemented grilled meats exceptionally well. The pork chop must be marinated overnight in lemongrass, fish sauce and garlic, then grilled over charcoal for the caramelised char that makes the dish. Com tam stalls in Saigon operate from early morning through late night, serving hundreds of plates daily.

🌿Spring onion oil, to drizzle

🫙Nuoc cham dipping sauce, to serve
Method

Make the pork chop marinade with fish sauce, lemongrass, garlic and sugar. Score the pork chops and marinate overnight.

Make the nuoc cham by combining fish sauce, lime juice, sugar, garlic and chilli. Adjust to balance sweet, sour and salty.

Cook the broken rice in slightly less water than normal — it absorbs more quickly than whole grain rice.

Grill the pork chops over charcoal or a very hot griddle until caramelised and slightly charred. Rest for 3 minutes.

Fry the eggs with a generous amount of oil until the whites are set and the edges are lacy and crispy.

Serve the broken rice with the grilled pork chop, fried egg, steamed meatloaf, pickled vegetables and spring onion oil. Drizzle generously with nuoc cham.
