Preheat your oven to 180°C. Place the sausages on a baking tray and cook in the oven for 20–25 minutes, turning halfway, until deeply golden and cooked through. This frees up your hob and gets the sausages properly browned without burning.

While the sausages cook, heat 1 tablespoon of oil in a large frying pan over medium heat. Add the bacon rashers and fry for 3–4 minutes each side until the fat is crispy and the meat is golden. Set aside on a warm plate covered loosely with foil.

In the same pan, add the mushrooms and fry in the bacon fat for 4–5 minutes until golden and tender. Push them to one side, add the tomato halves cut-side down, season with salt and pepper, and cook for 3 minutes until softened and slightly caramelised.

Pour the baked beans into a small saucepan over low heat and warm gently, stirring occasionally. Season with a pinch of black pepper. Keep them on the lowest heat so they don't catch on the bottom.

When everything is nearly ready, fry your eggs. Add a knob of butter to the pan over medium-low heat, crack in the eggs, and baste the tops with the foamy butter using a spoon. Cook for 2–3 minutes for a runny yolk — the white should be fully set but the yolk still wobbling.

While the eggs cook, pop your bread in the toaster and butter it generously the moment it comes out. Arrange everything on a large warmed plate — sausages, bacon, eggs, beans, mushrooms and tomatoes — with the toast on the side, and serve immediately.
