🫙Beef stock, 250ml
🍪Gingersnap biscuits, 8-10, crumbled
🍬Dark brown sugar, 2 tablespoons
🧈Butter and neutral oil, 1 tablespoon each for searing

Combine red wine, vinegar, onions, carrots, bay leaves, juniper berries, cloves and peppercorns in a saucepan and bring to a gentle boil, then let it cool completely. Place the beef in a deep glass or ceramic dish, pour the cooled marinade over it, cover tightly and refrigerate for 3 to 7 days, turning the meat once daily.2
When ready to cook, remove the beef from the marinade and pat it thoroughly dry with paper towels — this is essential for a good sear. Strain the marinade through a sieve and reserve both the liquid and the vegetables separately.3
Heat butter and oil in a large Dutch oven over high heat. Sear the beef on all sides until deeply browned, about 3-4 minutes per side, then set it aside briefly.4
Add the reserved marinade vegetables to the pot and cook for 3-4 minutes, scraping up the browned bits. Pour in the strained marinade liquid and beef stock, nestle the meat back in, cover with a tight lid and braise in a preheated 160°C oven for 2.5 to 3 hours until very tender.5
Remove the beef and rest it under foil. Strain the braising liquid into a saucepan and bring to a simmer over medium heat. Whisk in the crumbled gingersnaps and brown sugar, stirring until the gravy thickens to a velvety, sweet-sour sauce — taste and adjust with a pinch of salt or extra sugar as needed.6
