
About this Dish
The Netherlands' great winter dish — mashed potato combined with various vegetables: kale (boerenkool), sauerkraut (zuurkool), endive (andijvie) or carrots and onion (hutspot). Served with rookworst (smoked sausage) on top and a well of butter in the centre. Simple, sustaining and inseparable from Dutch winter culture. Hutspot has been made since the 16th century Siege of Leiden.

🥔Floury potatoes, 1.2kg peeled and quartered
🥕Carrots, 500g peeled and cut into chunks
🧅White onions, 2 large, roughly chopped
🌭Rookworst (Dutch smoked sausage), 2 links (about 500g total)
🧈Butter, 50g plus extra for serving
🥛Whole milk, 100ml warmed
🧂Salt and white pepper, to taste
🥩Bacon lardons, 75g (optional, for extra richness)
Method

Put the potatoes, carrots and onions all together in a large pot, cover with cold salted water and bring to a boil. Cook for about 25 minutes until everything is completely tender — the vegetables should be very soft, almost falling apart.2
While the vegetables cook, place the rookworst in a separate pan of just-simmering water (do not boil or the skin will split) and heat gently for 15–20 minutes until piping hot all the way through. If using bacon lardons, fry them in a dry pan until crispy and set aside.3
Drain the potatoes, carrots and onions very well, then return them to the hot pot over low heat for a minute to steam off any excess moisture — this is the secret to a fluffy stamppot rather than a watery one.4
Mash everything together thoroughly using a potato masher. Add the warm milk and butter and keep mashing until you have a thick, rustic mash — it should be hearty and textured, not perfectly smooth. Season generously with salt and white pepper.5
Stir through the crispy bacon lardons if using. Spoon the stamppot into deep bowls or onto plates, making a small well in the centre of each portion and dropping in a generous knob of cold butter so it melts slowly into the mash.6
